Learning to taste and evaluate honey like a sommelier is an essential skill that is learned through formal sensory training. It is a super power and everyone has the ability to sharpen their own natural skills through formal training and practice. In these classes we will learn the methods of sensory analysis to identify botanical sources, describe smells and flavors using a common vocabulary, write tasting notes for any honey, identify fermented and defects in honey, understand crystallization structures and much more. Knowing honey and how to describe its flavors is a powerful marketing tool for every beekeeper. It also is valuable to identify heat treated and adulterated honey. |
