How well do you know honey? Would you like to be able to describe the smells and flavors of your own honey using words besides - sweet, delicious and complex? Would you like to sharpen your senses so you can become a better taster? Do you know why honey crystallizes? and that the structure of the crystals can tell us the history of that sample? Did you know that off smells and flavors in a honey are considered defects?
Honey is a complex and fragile substance that does not get better with age like wine. There's a lot more to honey than just a sweet liquid and sensory analysis training is an important skill for beekeepers, health and culinary professionals and anyone interested in learning the art of honey tasting. The art of being a honey tasting expert is as complex as being a wine or olive oil sommelier.
HERE IS A TASTE OF WHAT YOU WILL LEARN......
* Learn the difference between taste and flavor.
* Sharpen your senses through olfactory and gustatory exercises.
* Learn how to identify basic aromas and flavors families found in honeys.
* Enrich your vocabulary to describe the aroma and flavor of honey.
* Taste and learn 18 uni-floral honeys and their botanical sources.
* Learn to write detailed tasting notes for any honey sample.
* Brush up on the composition and physical properties of honey.
* Understand the the structures of crystallization and how to evaluate them.
* Learn about the causes of defects in honey and how to avoid them.
* Use your knowledge to confidently pair honey with cheeses, wines and all food groups to compliment sweet or savory dishes.
* Certificate of completion awarded at the end of course. Fully accredited toward advancing to Level I and Level II in Italy.
This course is Level 1 - Introduction to the Sensory Analysis of Honey and approved by The Italian National Register of Experts in the Sensory Analysis of Honey. This 4 day course is the exact same course as taught in Bologna, Italy and attendees will receive a certification recognized by the Italian Register that will permit you to move to Level 2.
